      • Bacon Cheeseburger Skillet
      Servings: 1
      Prep Time: 15 min
      Cook Time: 20 min
      Ingredients
      • 1 small onion, diced
      • 1 clove garlic, minced
      • 1 lb. lean ground meat (turkey)
      • 1 can diced tomatoes
      • 1 tbsp tomato paste
      • 4 cups cooked cauliflower florets
      • 1 cup water
      • 2 cups shredded cheese
      • ½ cup skim milk
      • salt, pepper, onion powder to taste
      • 4 strips of bacon, chopped
      Spray pan with cooking spray and saute onion and garlic until tender over medium heat. Add meat to the pan with the cooked onion and garlic and brown thoroughly. Add tomatoes and tomato paste and mix well. Add water and cauliflower. Bring to a boil, reduce heat and allow mixture to simmer for 3 minutes. Add cheese and milk, stirring until cheese melts. Cut bacon into bits and add to the mixture, stirring well. Simmer on low heat for 4 minutes more. Remove from heat. Sauce will thicken upon standing. For the family, serve with hamburger buns.

      Ingredients
      • 4 cups chicken stock
      • 4 cups butternut squash, cubed
      • 3 large carrots, chopped
      • 1 small onion, diced
      • 5 stalks celery, diced
      • 1 clove garlic, minced
      • 1 tsp curry powder
      • ¼ tsp  ginger
      • ¼ tsp cinnamon
      • 1 can (15 oz) 2% evaporated milk
      • olive oil
      • salt
      • pepper
      Arrange squash and carrots on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast in a preheated oven at 425 degrees for 20 minutes. In the meantime, drizzle olive oil in a large stockpot over medium heat. Saute onion, celery, and garlic for about 5 minutes. Add in spices and cook for 2 minutes longer. Remove from heat. When squash and carrots are finished, add to stockpot. Add broth, cover and cook over low heat for 20 minutes. Work in batches, running soup through a blender until smooth. Serve with a dollop of Greek yogurt and pumpkin seeds.

      1. Healthy Deviled Eggs
      Servings: 6
      Prep Time: 15 min
      Ingredients
      • 6 large hard boiled eggs
      • 3 tbsp fat free mayo
      • 3 tbsp dijon mustard
      • 2 cloves garlic, crushed
      • 1 tsp salt
      • 1 tsp pepper
      • 1 tsp onion powder
      Cut each egg in half, removing yolks into a large bowl. Using a fork, mash the yolks until they’re small and granular. Add the remaining ingredients. Stir to combine, scoop back into egg halves.

      1. Creamy Chicken and Spinach Bake
      Servings: 6
      Prep Time: 15 min
      Cook Time: 45 min
      Ingredients
      • 2 cups diced cooked chicken breast
      • 10 oz baby spinach
      • ½ cup fat-free sour cream
      • ½ cup light mayo
      • 1 cup shredded mozzarella part skim cheese
      • ¼ cup parmesan cheese
      • 2 tsp garlic powder
      Preheat oven to 350 degrees. Steam spinach, draining any excess water. Combine sour cream, mayo, cheese, and garlic powder. Spray baking dish with cooking spray. Pour half of the mixture into the baking dish. Top with chicken and spinach, then pour the remaining mixture on top. Bake for 45 minutes.

      1. Bariatric Pumpkin Pie Cheesecake
      Servings: 8
      Prep Time: 10 min
      Cook Time: 75 min
      Ingredients
      • 3 packages fat-free cream cheese (8 oz)
      • 1 cup sugar substitute
      • 1 tsp vanilla extract
      • 1 cup canned pumpkin
      • 4 egg whites
      • ½ tsp ground cinnamon
      • ¼ tsp ground nutmeg
      • ¼ tsp ground allspice
      Preheat oven to 375 degrees. Combine cheese, sugar, and vanilla in a large bowl. Mix together until smooth. Add pumpkin, eggs and spices. Beat until smooth and creamy. Pour into a 9” pan or pie crust. Bake for about 60 to 70 minutes, or until the top turns darker. Remove from oven and allow to sit until room temperature. Refrigerate. After thoroughly chilled, remove the pan sides and cut. Serve with fat-free whipped cream.
